Spicy yamarita (dun dun oniyeri)


When I walk into a popular fast food chain in Lagos, my primary order is always Yamarita and char grilled fish! If you've ever lived in Lagos, there are no prizes for getting this one right!!!
Although TFC made the name "Yamarita" popular, this fried yam coated in eggs and spice has always been a popular treat in parts of western Nigeria. 
Called Dundun oniyeri, it's a very tasty way of preparing yams beyond just cooking or frying. The process actually involves boiling to soften before frying. This treat is not for those running from oil as deep frying the boiled yam means more oil is absorbed. But it's so finger licking good and worth having on a cheat day!!!

1. Yam
2. Flour (60g/half a cup)
3. Ginger powder 
4. Garlic powder
5. Chilli flakes
6. Paprika 
7. Chicken stock powder 
8. 3 eggs 



1. Sliced and peel the yam ( I wanted my yam perfectly circled, so I used my circle cutter)


2. Wash clean, add water and little salt (optional) then place on the cooker to cook for roughly 7-10mins depending on how thick your slices are


3. In a bowl add in the flour and spices 


4. Then the eggs


5. Mix (if you find your mix to be to thick, add in little milk at a time)


6. Once the yam are almost cooked, drain the water out then allow to rest for few mins


7. Heat up the deep fryer or frying pan. Next start deeping the yam into the batter, then gently drop them one at a time  into the hot oil.. Fry this golden, take out of oil then place on a clean kitchen tissue towel to help soak up excess grease. 

I love the heat that comes through every bite, my kids also enjoyed it... Why not give you spare yam a make over

  4. Hi Jennifer, I spiced the fish using garlic, ginger, stock cube, paprika, and chilli flakes... Leave for few hours then fry or grill
