Nigeria egg rolls (spicy egg rolls).


The Nigerian egg roll, in my opinion, is our response to the almighty scotch egg. The ingredients are easily accessible and very affordable, little wonder it found its niche in the street food snack market. These Egg rolls are very popular and are normally hawked by street food vendors. It goes very well with a bottle of chilled soft drink and can be quite filling.
As usual, most people don't know they can make these at home, I tell you, it's so easy!!! Give it a try today!!!

INGREDIENTS 

*320g plain flour
*25g butter
*3 tbsp sugar
*1tsp chilli pepper (optional)
*6 large eggs (boiled and peeled)
*pinch of salt
*1/2 tsp parsley (optional)
*1/2 nutmeg (optional)
*1/2 baking powder 
*cold water (roughly 160ml)
*vegetable oil to deep fry 

1. Start by boiling the eggs until hard boiled 


2. Measure all the ingredients into a bowl, then start adding the water little by little at a time 

3. Mix with your finger, until the dough comes off the bowl (allow to rest for few mins before beginning the next process) 


4. Switch on the deep fry, then divide the dough into 6. Dust working top surface with flour, then flatten the dough on your Palm, place the egg in the middle then seal up. (You can use water to seal up the edges)


5. Start frying them 


6. They should look golden brown in colour. Please fry on medium heat and be very patient to ensure proper cooking. Most beginners remove it too soon and end up with raw dough inside.
