Ewedu (jute leaves)


Ewedu is a popular puréed green leafy vegetable side sauce served with stew for eating swallow meals amongst the Yoruba people of west Africa.
It is fast and easy to cook.
Traditionally, the leaves are plucked, cooked till tender and a special type of broom is used to break/mash it. However, it's 2015 and I'm all about the easy life!!! To this end we shall be using an electric blender! 

Ingredients

*Ewedu leave or Jetu leaves
*Salt to taste
*water 


1. Start by plucking the leaves only.. 


2. Wash with cold running water, then pour into the blender (another method will be to pour into hot boiling water add salt, then use a small kitchen broom to mash the leaves apart )


3. Blend smooth.. Or as preferred 


4. Pour in a pot, add salt then cook. Don't over cook, because that would change the colour of the leaves from green to blackish colour and any nutrient will be lost 


And it's ready... 


I served mine with stew and gbebiri, which was accompanied with Amala (yam flour)
