Blueberry muffin pancake



INGREDIENTS

*1/2 cup fresh blueberries
*2 tbsp sugar 
*1 cup wholewheat flour (140g) or any flour of your choice 
*1/2 cup water (125ml)
*1/2 teaspoon nutmeg
*1 egg
*1/2 teaspoon lemon zest 
*1/2 teaspoon vanilla extract 
*1tbsp Olive oil (any oil of your choice)
*Cooking spray or butter to fry



1. Gently blend the blueberries, olive oil, egg with water


2. Pour the blended mix into the the flour, sugar, nutmeg, vanilla extract and lemon zest 


3. Mix thoroughly together with a whisk or spoon 


4. Place pan on the cooker, then spray. 


5. Pour batter into pan, fry on low heat turning both side until it turns golden brown 


Super yum yum healthy muffin pancake , I topped mine with double cream, little brown sugar, nutmeg and some fresh berries FAB!!!!
