Kunun aya (Tiger nut milk)


This is a nutritional powerhouse drink that is refreshing and loaded with nutrients. Tigernuts or aya are popular in Northern Nigeria and are usually eaten as whole nuts as a snack. 
You can get both fresh and dried versions of these nuts.
This drink can be made with some dried palm dates added in as well. 

INGREDIENTS

*200g tigernuts 
*1tsp vanilla extract
*1tsp cinnamon 
*2tbsp syrup or honey
*750ml water 

1. Wash and soak the tigernuts in water for up to 48hours. 


2. Pour into a blender, using the same water used for soaking the nuts to blend them.


3. Add in vanilla extract 


4. Then the cinnamon 


5. The syrup.. Then blend till smooth 

6. Place a milk cloth or clean cotton cloth over a larg bowl (this prevents any pulps from getting into the milk)


7. Pour the blended milk over the cloth


8. Then squeeze till all the milk comes through (don't throw away the pulp click for here for tigernut cookies recipe). Once completely squeezed out, bottle the milk then refrigerate.  


Best drank chilled, I love the combinations of flavours coming through the milk... I will 100% be using the remain milk to make my smoothie... Refreshing
