Nigeria egg rolls (spicy egg rolls).

The Nigerian egg roll, in my opinion, is our response to the almighty scotch egg. The ingredients are easily accessible and very affordable, little wonder it found its niche in the street food snack market. These Egg rolls are very popular and are normally hawked by street food vendors. It goes very well with a bottle of chilled soft drink and can be quite filling.
As usual, most people don't know they can make these at home, I tell you, it's so easy!!! Give it a try today!!!

INGREDIENTS

*320g plain flour
*25g butter
*3 tbsp sugar
*1tsp chilli pepper (optional)
*6 large eggs (boiled and peeled)
*pinch of salt
*1/2 tsp parsley (optional)
*1/2 nutmeg (optional)
*1/2 baking powder
*cold water (roughly 160ml)
*vegetable oil to deep fry

1. Start by boiling the eggs until hard boiled

2. Measure all the ingredients into a bowl, then start adding the water little by little at a time

3. Mix with your finger, until the dough comes off the bowl (allow to rest for few mins before beginning the next process)

4. Switch on the deep fry, then divide the dough into 6. Dust working top surface with flour, then flatten the dough on your Palm, place the egg in the middle then seal up. (You can use water to seal up the edges)

5. Start frying them

6. They should look golden brown in colour. Please fry on medium heat and be very patient to ensure proper cooking. Most beginners remove it too soon and end up with raw dough inside.

Cannot wait to dig in, already got my bottle of coke chilling away in the fridge. Why not give it a go today? You'll never buy the street versions anymore!!!

Homebaked delicious Sausage Rolls... something for the weekend

There's something about a warm piece of sausage roll and a cuppa you just have to love. For me its a comfort food I can't get enough of any time, any day. I try not to make it often for my household as I would always end up pigging out on them!!!

INGREDIENTS
Sausage meat (Remember to precook before using, grilling or frying are recommended)
500g plain or all purpose flour
250g butter (I used vegetable margarine which is pretty good for pastries)
2 eggs
1 Tsp Baking Powder
Pinch of salt
About 200ml of cold water
Chilli flakes or ground dry pepper

*

METHOD
Combine all dry ingredients with the butter, 1 egg and water.

Combine gently. This doesn't need heavy mixing so hand can be used. Roll up dough and wrap up with long film. Set aside in the fridge for about 30mins or more (the longer the better).

Once the dough is taken out of the fridge or cold place, allow it to rest for 5mins or so befor rolling out. Now place the dough on a  clean surface, then start rolling out.

Cut the dough into rectangular shapes and put some of your previously prepared sausage inside. Roll and seal each with a pastry brush and the second egg.

Place each on a baking pan. I use wax paper to line my pans. If you don't have wax paper, simply prepare your pan by applying a thin coat of butter or oil inside, then coating with flour.
Using your pastry brush, do a quick egg wash over the rolls so that they will come out of the oven glossy and more appealing.

Place in your preheated oven and bake for about 20 minutes or it begins to turn a light golden brown. The temperature I used was Gas Mark 5 /190c /375f.

Here's the baked, flaky, deliciousness all ready to be tucked in to!!! I served with some sweet chilli sauce.

NIGERIAN BUNS: CRUNCHY MEETS CAKEY!!!

YOU'LL NEED

Baking powder 1 tablespoon
Butter 85ml (at room temperature)
Milk  195ml
Eggs  3
Sugar 100g or less if needed
Pinch of salt
vanilla essence 1 teaspoon
Plain/All purpose Flour  400g
Vegetable oil of your choice for frying

METHOD

We don't want to over mix so everything will be added and incorporated gently. First we'll add the butter to the flour in a clean bowl.

Next add your sugar and baking powder...

Add your eggs...

Add your salt...

add milk...

Now use clean hands to gently mix and fold all together.

Your batter should look like this, not watery and not hard.

Now you have to wash off all the batter from your hands as we prepare to fry. In a bowl pour in warm water and some oil, because sticky hands are difficult to work when handling dough.

Make some balls with your mix.

Drop in hot oil and fry for a few minutes. Fry a few at a time till they are a light golden brown. Use medium heat so it can cook through to the core without burning on the outside.

Fry a few at a time till they are a light golden brown. Use medium heat so it can cook through to the centre without burning. A lot of people make the mistake of cooking with high heat and end up with cooked outside and burnt inside buns!!!

Serve and enjoy.

Nutella and chilli flakes puff puff.. Nigeria puff puff just got a makeover

Nutella and chilli flakes puff puff covered in cinnamon sugar

Today was one of them days, I got fed up of eating the same old plain puff puff. I sat down thinking of how I could redefine it with something the kids would LOVE, going through my kitchen cabinets I spotted our jar of leftover #Nutella smiling back at me!!!Then it hit home!!!
I enjoyed making these and my kids enjoyed eating them.... bless them.
Please note for this recipe self raising flour was used, compared to plain flour which would require up to 45mins or longer for the yeast to completely work its magic.
When using self raising flour, you need not to wait long 10mins max is just fine.

Preparation/cooking time : 25Mins
Ingredients
270grams of self raising flour
2 Tablespoon nutella
7g fast active dry yeast
260ml cup of warm water
50grams granulated Sugar
Pinch of sea salt or normal salt
1 teaspoon of chilli flakes ( optional)

Procedure...

Step 1.. Get all ingredients ready

Step 2..  Activate the yeast by pouring warm water into a cup,  then adding the yeast into the water

Step 3.. Add in tablespoon of sugar

Step 5.. Stir and leave to froth for up to 5mins.

Step 6.. Measure the flour into a clean bowl

Step 7.. Add in the salt

Step 8.. Add in the #nutella

 Step 9.. Then sugar

 Step 10.. And water

Step 11... Then the froth yeast mix

Step 12.. Combine the ingredients with a wooden spatula

Step 13.. Finally, the chilli flakes.... Note this option can be skipped.

Step 17.. Once properly combined, place in the microwave or any warm place... this helps the dough increase in size due to the active yeast . You can leave for as long as possible, but because its self raising flour 5mins - 10mins sitting time is fine

Step 18.. Heat up the deep fryer.. (a deep wok can also be used). Then gently start dropping in the batter in the hot oil.

Step 19.. Once properly fried, gently take them out.. then place on a kitchen towel, so excess oil can drain off

Step 20.. The inside should look like this. Delightful!!!

Lastly serve!!!
*A side dip of nutella and some sprinkled chilli flakes can join the yummy party :)
