"Baba dudu" also known as coconut toffee or Black toffee



Baba dudu is a coconut milk based candy that used to be popular with kids in Nigeria. It's not so popular these days although its still available. For those that ate it as kids, its sheer nostalgia to pop one in your mouth again.
Whether to reignite childhood memories tor to create new ones, this is a treat worth trying...At least you are sure there are no chemical additives lurking anywhere!!!


INGREDIENTS
Coconut milk extracted from 3 coconuts (Approximately 3 coconuts) ((See how to make/extract coconut milk))
5 tablespoon of sugar
1/2 teaspoon of salt

PREPARATION
Pour your milk in a clean pot and place on heat.



Bring to the boil


 Add your sugar


 Add your salt

 Keep stirring.  You need to stay by that pot and stir consistently to avoid it getting burnt especially when it starts to get dry.

 When reduced and dry enough, transfer to a clean bowl.



Using a spoon to scoop when its a little less hot, transfer to cling film or nylon bags and shape as pictured.

Homemade coconut candy..... Just as mama makes them


Coconut candy as its popularly known in Nigeria is a childhood classic favorite of most kids that grew up in Nigeria. This was one of the things our lunch money or pocket money was devoted to.
Its simply grated coconut cooked in caramelized sugar. Some make it very dark while some prefer it light in color, its all about how long you cook your sugar for.


INGREDIENTS
*300g coconut (grate about 2 fresh coconuts or use shop bought unsweetened coconut flakes).
*250g Sugar (granulated or caster)
*130ml milk or water
*Optional, 1tsp of mint flavour





PREPARATION

Place a clean pot on heat and pour in your milk/water and sugar.


Stir very well over heat


Bring to the boil

Once it begins to boil pour in the grated coconut.


Stir and keep on stirring on heat.


If you are using any flavor add it immediately as it burns real fast. You have to be by the pot to stir continuously to avoid burning.


Once it gets golden brown, pour out of the pot into a clean bowl. You can use a spoon to scoop into desired portions and use the palm of your hand to make into smooth balls. Once it gets cold you might not be able to mold anymore so bear that in mind.

Super moist coconut milk cake... The taste is heavenly



A slice of this cake had me screaming "MY WAISTLINE!!!!!!"... the best cake ever since I discovered the triple chocolate cake, I just had to stop myself from stuffing my mouth with so much cake!!!
This recipe is a must try and have in your recipe book... You will be back to testify, GUARANTEED. 




INGREDIENTS

300g Self raising flour
250g Caster sugar (add more (20g) if using unsweetened desiccated coconut)
250g Butter (at room temperature)
370ml Coconut milk tinned or fresh, ((See how to make/extract coconut milk))
100g Sweetened desiccated coconut 
4 Eggs (at room temperature)

*If using plain flour / all purpose flour, add in 2 Tsp of baking powder and a pinch of salt to the flour. 
*It's also it is important to sift your flour, this helps to makes you cake fluffy and airy. 
*Always pre-heat your oven before any baking. Bake  the cakes at 170 celsius fan oven or gas mark 5



Weigh out your ingredients



Sift Flour



Combine Sugar and butter in the mixing pan. Mix thoroughly.


Add in your eggs one at a time and mix



Add in flour and continue mixing.



Add in your coconut milk, keep mixing



Add in desiccated coconut, keep mixing



Your batter should look light and airy like this.



Pour batter in cake pans. I decided to use these fancy molds.



All set for the oven.



Bake for 20 minutes or until a wooden pick/skewer/tooth pick can come out clean when used to poke the cake.


Bring out of the oven and place on a wire rack to cool for about 10 minutes.


Finally.... Ohhh my my my, this cake calls for some luscious, smooth and tasty rum ICE-CREAM on the side!!!
