Oven baked scotch eggs.. Well spiced and healthy


Scotch eggs are a very popular and sought after snack in Nigeria. They are one of our favorite Nigerian imports from the UK although the "invention" was inspired by Indian Moghul cuisine.
These savory eggs crusted in sausage meat can be prepared spicy or mild, fried or baked...the fried version is more popular in Nigeria.
Today we will be looking at how to prepare the baked version. Aren't we all trying to live healthier? The things we do for our health, lol. 


INGREDIENTS 

8 boiled eggs
1kg of Pork sausage (beef, chicken or turkey sausages can be used)
1 Tsp nutmeg
1Tbsp flake or crushed chilli
1Fresh egg
1 cup of plain or self-raising flour
11/2 cups of breadcrumbs
1Tsp parsley



Preparation;

Step 1. Firstly, pre-heat your oven. In a large bowl pour in the sausage, chilli, parsley and nutmeg, then combine together with a spoon.


Step 2. Take a small chunk from the mix, then with the palm of your hands flatten to fit an egg. (Cling film can also be used, to avoid much mess).



Step 3. Place the egg in the middle of the mix, then press gently to cover the egg thoroughly.




Step 4. Once covered, roll the scotch egg in flour


Step 5. then roll in egg,


Step 6. then roll in breadcrumbs.



Step 7. Now place all on a greased baking tray


Step 8. Place the baking tray inside the oven, then bake for 16mins at 180°c fan oven (adjust accordingly)




Step 9. Once completely baked, take out of the oven... Allowing the scotch eggs to rest for few minutes...



Finally serve, with some salad and any sauce of your choice.
