Almond and banana loaf cake


This banana almond loaf is a cross between a loaf and bread. It just sits perfectly in the middle of both worlds. Not as sweet or dense  as a regular banana bread, not as light as a regular load. I call it the best of both worlds. My husband doesn't ordinarily eat cakes but he totally loved this. It was also a hit with the kids!!!


Ingredients
390g of self raising flour (3cups)
3 large eggs
125g butter (1/2cup) butter
200g caster sugar (1cup)
1 Cup of whole milk
3 tsp almond extract
3 over ripen bananas (mashed)

To sprinkle 
3 tbsp sliced almonds
3 tbsp granulated sugar

*If using plain/all purpose flour, add half teaspoon of baking soda and 1/4 teaspoon of salt per cup of flour to make it equivalent to self raising flour.



Step 1. Start by pre-heating the oven at 180°c electric fan oven (gas Mark 4/5). 

Next cream together the butter and sugar until pale and doubled in size. 


Step 2. Add in the eggs, while still whisking on high speed. Add one at a time.


Step 3. Add in the almond extract 


Step 4. The mashed bananas 


Step 5. Next the milk 


Step 6. Turn of the mixer, using a wooden spoon gently fold in the flour into the wet mix 


Step 7. Pour into batter into the greased and floured tins 


Step 8. Sprinkle the top with sugar 


Step 9. Next almonds, then place in the oven to bake for 


Step 10. To check if the cake is well baked, put a toothpick through.. If it comes out clean, the cake is baked.. If otherwise leave for few more mins


Looks simply divine!!! Yummmmm.. The smell is just Wowzers!!!
*always leave your cake on the tin for at least 5mins before bringing out.


Here we go, super moist and yummy! Served with cold milk
