"Baba dudu" also known as coconut toffee or Black toffee



Baba dudu is a coconut milk based candy that used to be popular with kids in Nigeria. It's not so popular these days although its still available. For those that ate it as kids, its sheer nostalgia to pop one in your mouth again.
Whether to reignite childhood memories tor to create new ones, this is a treat worth trying...At least you are sure there are no chemical additives lurking anywhere!!!


INGREDIENTS
Coconut milk extracted from 3 coconuts (Approximately 3 coconuts) ((See how to make/extract coconut milk))
5 tablespoon of sugar
1/2 teaspoon of salt

PREPARATION
Pour your milk in a clean pot and place on heat.



Bring to the boil


 Add your sugar


 Add your salt

 Keep stirring.  You need to stay by that pot and stir consistently to avoid it getting burnt especially when it starts to get dry.

 When reduced and dry enough, transfer to a clean bowl.



Using a spoon to scoop when its a little less hot, transfer to cling film or nylon bags and shape as pictured.
