Chinese Style Chicken and Noodle Stir Fry


Recipe feeds 2...

INGREDIENTS

500g chicken breast
150 grams egg noodles
300g mixed vegetables 
2 tablespoon oyster sauce
1 teaspoon soy sauce 
2 teaspoon Chinese chilli oil (if you don't have this, use regular chilli and any oil of your choice. e.g coconut oil, sesame seed oil etc)
Salt to taste (optional)



Soak the noodles in hot boiling water for 5-7mins

Slice the chicken breast into thin slices

Add oil into a wok pan placed on heat

When heated, add the sliced chicken

Then the chilli pepper

...then the oyster sauce.. ( add all seasoning carefully, taste as you go along to avoid overpowering it).

...then the soy sauce

Stir to combine, allowing it to cook for 3-4mins... (try not to over cook the chicken breast, otherwise they become very tough to chew)

Next add in the vegetables

Then stir to combine all and reduce the heat.

Now back to the noodles. Drain the noodles.. make sure to drain properly as we don't need excess water going into the chicken mix

Pour the noodles into the chicken mix

Stir,  taste for seasoning.... then allow to combine for some few mins on low heat... while stirring


And its ready.... enjoy while hot
