LEAF WRAPPED MOIN MOIN - (moin moin elewe), Beans cake

Moin moin is always a hit when prepared in leaves. They add an extra flavor that hit the senses in a way you can't explain! Alas, its a lot of work so most times a lot of people use polytene bags, cans and the such containers to cook it.

INGREDIENTS
Ground crayfish - 1 tbsp
Whole smoked prawns( remember to remove the heads)
Mackerel (Boiled or roasted, deboned and flaked)
Olive Oil (1/4 cup)
Stock Cubes, 2-4 pieces
Onions
Raw Eggs
Red Bell Pepper (Tatashe)
Spring Onions
Crushed Chilli peppers (or ata gungun)
Water
500g beans powder*
*I used the beans powder because its more convenient for me to use right now. Adding raw eggs into    the mix is essential when using the powdered beans as it gives it more body.



METHOD
Put your bell pepper, onions, smoked shrimps, beans powder and raw eggs in your blender with some water and blend.
Blend very well to form a smooth paste.


Pour out the blended mix into a clean bowl. Tip in the rest of your ingredients and mix thoroughly.


Now we pour our mix in the leaf as pictured below.
First you break the stalk at the lower half of your leaf to facilitate bending.
Wrap your leaf to form a cone.
Fold the tail backward where you broke the stalk earlier.




Now you are ready to pour in your mix. Do this carefully and fold as pictured below.


Your pot should be lined with stalks, rice sack or aluminum foil before laying down the moinmoin to help retain steam for cooking.
Cover and cook for about 45 minutes. Monitor to ensure its not too dry to avoid getting your food burnt.
Serve and Enjoy.
